The Wines of Domaine LEROY...
are produced through
the bio-dynamic method. This method prohibits the use of all
chemicals, including weed killers, pesticides and synthetic
fertilizers, moreover it reintroduces the importance of the
knowledge of the earth’s cycles and essential cosmic
rhythms throughout the year.
The golden rules of caring for the vineyard and making wines are:
- “massale” rather than “colonale”
selection: each rootstock should express in its way the particular
character and typicity of the growth
- removal of suckers
- removal of excess green grapes
- careful selection of grapes at the curverie and drying,
if necessary
- no de stemming
- prolonged vatting in traditional wooden vats
