2023 Jacques Carillon - Puligny Montrachet (750ml)
The Carillon family has grown vines in Puligny-Montrachet since at least 1520, but Domaine Jacques Carillon in its current form dates to 2010, when the historic family estate was divided between brothers Jacques and François. Jacques now runs roughly five and a half hectares with his wife Sylvia, farming with a near-organic, minimalist philosophy that favors low yields and a light hand in the cellar, letting the village's limestone terroir speak clearly.
This village Puligny-Montrachet is assembled from eleven small parcels spread across seven different sites, with vines averaging around forty years old. The grapes are picked by hand and pressed gently, then the wine ages twelve to eighteen months in oak barrels on a six-year rotation, with only fifteen to twenty percent new wood. It finishes its maturation in stainless steel tanks for several months before bottling.
This is a fleshy, generous Puligny, opening with aromas of sweet orchard fruit, bread dough and toasted nuts, with a cool mineral edge underneath. The palate is medium to full bodied, ample and open-knit, with enough acidity to keep it balanced rather than heavy. Pair it with poached lobster, veal in a light cream sauce, or triple-cream cheese.
