The 2018 Salto Moscofilero Wild Yeast, a Mavrofilero clone actually, comes in at 11.5% alcohol, six grams of acidity and just two grams of residual sugar. Showing off glorious freshness and lovely aromatics, this has fine tension on the finish, flavor and plenty of power. It simply grips the finish. An obvious step up on the regular Moschofilero this issue (spellings vary with Greek transliteration), this does have the advantage of an extra year of aging, but its style is also different?focused more on acidity and power than on fruitiness. It's in a fine place right now.
