An Irish non-chill filtered, triple distilled whiskey and finished at the Atlantic Warehouse of the Clonakilty Distillery. This delicious single batch blend is bottled at 43.6% and is the first whiskey from the Clonakilty Distillery. NOSESoft spices, vanilla, fresh cut grass, slightly perfumed, ripe apple/pear notes. Fresh leather tones. The colour is light and echoes through the liquid. It might be my imagination (or good marketing) but I get a hint of sea salt. PALATESweet warm spices with a subtle hint of white pepper and ginger. Fresh cut grass, hazelnut and almond notes complement a delicious sweetness. It made me think of eating a toffee apple at the coast in west cork. FINISHThis is a well-balanced Irish whiskey with spices lingering on the palate. I think the use of the double barrel finish adds a complexity to the flavour. The wood shavings mingle with the charded oak to give a finish of candy popcorn or perhaps a toffee apple.
