The St. Michael-Eppan 2021 Alto Adige Sauvignon Sanct Valentin feels like an ice cube on the palate that refreshes and revives. This is a sharply tonic and lean wine with great tension and energy. The bouquet opens to passion fruit, lychee, green papaya and underripe pineapple. The alcohol content is recorded at 14%, which seems a little high for an Alto Adige wine, but the heat is well absorbed by the wine's lean texture. Zesty exotic fruit appears on the finish. Sanct Valentin sees mostly stainless steel with 25% aged in tonneaux
