The 2023 Pinot Noir is also picked on Grand Cru Osterberg. The ferment contained 15% whole bunches “to pronounce the delicate nature of Pinot Noir,” as Sophie Schaal says. Extraction was just via wetting the cap until fermentation started, followed by a few remontages until the peak of fermentation, with less later. It was aged in pièces, of which a fifth were new, and bottled in June 2023. The nose is smoky with oak but countered with vivid notions of ripe, red cherry and juicy pomegranate. The tannins are really fine, with a chiffon crunch, and a whole lot of tension. This is beautifully translucent and light-bodied, but with immense purity and a lovely smoky echo. (Bone-dry)
