A sparkling blend of 70% Chardonnay and 30% Pinot Noir, the Silverthorn 2019 Robertson Méthode Cap Classique Brut Jewel Box opens to aromas of orchard fruit, Golden Delicious apple and almond cream. It offers soft beading that feels silky initially until the linear and sharper nature of the wine's acidity kicks in and resets the palate. The Chardonnay is barrel fermented and sees 55 months on the lees. This is a 4,000-bottle release.
