Cotton & Reed opened in 2016 in DC's Union Market neighborhood, becoming the first legal rum distillery in the District in nearly a century. It was founded by former NASA engineers who left the agency to focus on distilling, and every step of production, from fermentation through bottling, still happens on site at the Northeast DC facility. The distillery has since expanded distribution across the Mid-Atlantic while continuing to hand produce its rums in small batches.

White Rum starts with minimally processed cane sourced from Louisiana, combined with cane syrup and blackstrap molasses drawn from one of only two Bonsucro certified sustainable sugar refineries in the country. The wash undergoes two separate, slow fermentations, one using a Martinique agricole yeast strain and the other a Loire Valley Chenin Blanc yeast, a dual substrate, dual yeast approach meant to build complexity by drawing on both French and Caribbean rum traditions. The fermented wash is then double distilled with tight cuts in a custom hybrid batch still, lightly charcoal filtered, and bottled without added sugar.

The result is a densely aromatic yet light bodied white rum, with notes of fresh cut grass, ripe mango, and banana carrying through a clean, versatile finish suited to classic tiki style cocktails.

We ferment raw cane syrup and blackstrap molasses with a rhum agricole yeast strain and a chenin blanc yeast strain to develop a rich tropical fruit character. Two distillations on our hybrid pot // column still take our spirit up to approximately 180 proof. This gives our White Rum a light enough body to perform in a mojito, but leaves enough fruity character to create a fruity daiquiri. Once it comes off the still, we add filtered water, run it through a charcoal filter, then bottle it by hand at our distillery in Northeast DC."
