Domaine Servin:
As far back as the 16th century, the monks of Saint Martin cited the Servin family as vineyard owners in Chablis. Since then, successive generations have perpetuated the family's tradition and ever-evolving expertise as vineyard workers, coopers and winemakers.
Domaine Servin's 36 hectare of vineyards are situated within the boundaries of the village of Chablis, lying solely on Kimmeridgian limestone soils, which gives the wines their incomparable minerality. The majority of the vineyards are over 40 years old. The different rootstocks of these non-cloned Chardonnay plants produce a unique style of Chablis, combining concentrated flavours and intense aromas, our guarantee of excellence.
Today, the Servin "method" is a careful mix of traditional and modern techniques. Following tradition, the finest vineyards are hand harvested and each parcel is vinified individually, in order to respect the identity and authenticity of the terroir. Modern technology is used to produce consistently high quality wines, while retaining the inimitable "Servin" style. Each wine must find its own identity through specially adapted, tailor-made wine making.

2019 Servin Chablis Butteaux
The 2019 Chablis Butteaux 1er Cru might well possess the finest aromatics among Servin's Premier Crus this vintage, leaping out of the glass with vivacious lemon zest, Granny Smith apple and crushed stone notes, and then becoming more floral with aeration. The palate is well balanced with a slightly reduced opening that works in its favor. There is wonderful purity to this Butteaux, and although a little oak still needs to be assimilated with bottle age, give it a couple of years and it will be positively singing.

2019 Servin Chablis Preuses
The 2019 Chablis Les Preuses Grand Cru has an exquisite bouquet that is a little fuller and feels riper than the Bougros, hints of orange blossom and apricot infusing the citrus fruit, the flintiness only becoming more apparent with aeration. The palate is extremely well balanced, delivering the tension that you expect from a Chablis. Spicier notes of ginger and lemongrass surface toward the very cohesive finish, which feels a tad sweeter than Servin's other Grand Crus this vintage. Superb.
