Made in a traditional style, it is a blend of unfermented grape must—typically from Chardonnay and sometimes Trousseau—fortified with the estate's own marc du Jura, a type of brandy distilled from the leftover grape pomace. This process, known as mutage, stops fermentation, preserving the grape's natural sweetness and aromatic freshness. Aged for at least a year in oak, Gahier's Macvin is renowned for its vibrant energy and balance, offering a complex palate of dried fruits, honey, and nuts, with a signature saline and mineral-driven acidity that makes it both luscious and refreshingly clean.
