Pallini began in 1875 when Nicola Pallini founded the family business in Antrodoco, a small town on the border of Lazio and Abruzzo, trading in wine and spirits. His son Virgilio later relocated the company to Rome, and Pallini remains family owned today, now guided by the fifth generation under CEO Micaela Pallini. Best known in Italy for its anise liqueurs, the house built international fame through its limoncello, which by 2024 had become the world's best selling limoncello by both volume and value.

Pallini Limoncello follows a Pallini family recipe developed more than a century ago and relies on Sfusato lemons grown on pesticide-free terraces along the Amalfi Coast. The lemons are hand-picked in Vietri sul Mare and peeled at a facility nearby, with the harvesting, peeling, and infusion completed within a single day to preserve freshness. Only the outer yellow zest is used, steeped in neutral beet-derived spirit for as long as eight months before the concentrated infusion travels to Pallini's Rome distillery for blending with beet sugar and additional lemon oils.

The liqueur pours a bright, sunny yellow and delivers an intense, true-to-fruit lemon aroma. On the palate it is bold and citrus forward, balancing natural acidity with a clean sweetness and a smooth, lingering finish. Bottled at twenty-six percent alcohol by volume, it is traditionally served icy cold as a digestivo.
