West Cork Distillers was founded in 2003 by three childhood friends, food scientist John O'Connell and brothers Denis and Ger McCarthy, who got their start making an unsweetened malt and sugar beet liqueur out of Denis's garage before eventually building a proper distillery. The operation, now based on a site in Skibbereen, has grown into one of Ireland's largest independently owned whiskey producers, malting its own Irish-grown barley and exporting to more than 70 countries. It stands as the most southerly whiskey distillery in the Atlantic Archipelago, a detail the brand highlights on its labeling.

Bourbon Cask is West Cork's original blended Irish whiskey, made from a mix of 75 percent grain whiskey and 25 percent malt, triple distilled before maturing exclusively in first-fill ex-bourbon casks. The whiskey is produced using 100 percent Irish-grown grain and local spring water, and it's bottled non-chill filtered at 40 percent ABV, or 80 proof, keeping the profile approachable rather than aggressive.

The nose is delicate, opening with light malt, citrus zest, and a touch of cracked pepper. On the palate, the whiskey turns smooth and creamy, with crisp apple, vanilla, and nutmeg giving way to soft caramel and toasty oak. The finish runs medium in length, warming and fruit-forward, with a lingering thread of subtle spice that keeps the whole profile easy-drinking.
