Siete Misterios Coyote is made with the maguey Coyote. Coyote in this region very closely resembles maguey Arroqueno while it’s growing, but the mezcal that is made from it is quite different. Typically, maguey Coyote has more herbal notes than Arroqueno, and this mezcal is no exception. Due to the rarity of this agave in the Sola de Vega region, the Siete Misterios Coyote mezcal is very rare and hard to find. If you see it, try it. This mezcal is distilled in clay pots and all of the milling is done by hand.
The Espadín Mezcal was our first product. After learning from Maestros Mezcaleros across Mexico, we crafted the most traditional production process. We noticed distillates in Sola de Vega had a sweeter and spicier feature compared to other villages, so we decided to produce our own Mezcal there and explored the concept “from seed to the bottle.” Our Espadín Mezcal displays rich minerality with notes of avocado leaf, fresh herbs, flowers, and citrus.
