Sotol La Higuera Cedrosanum has mineral and caramel notes on the nose with smoked grass and cedar on the palate. The finish is dry and the texture is balanced.
This blend comes from two different casks: Cask 1 was distilled by brothers Axel & William with their handmade column still; Cask 2 consists of a heady rum from older brother Rommel’s copper alembic still. The combination of the three brother’s distillates is well-balanced and pops with bright, herbal, and chocolate notes that shine through the finish.
Nose: brown sugar, candy apple, pine

Fermentation: 5-10 days in stainless steel tanks with ambient yeast

Aging: 24 months in an ex-Bourbon cask in a humid climate, 9% angel’s share
Distilled nine times in very small batches. French copper Alambic stills are employed in the creation process, which takes several weeks from start to finish. Made from French wheat and spring water from the Cognac area, this vodka created for ultimate smoothness.
